About Our Shiro

Shiro powder is chickpeas milled together with garlic, onion and spices, and the skill is in the simmering. Cooked slowly and stirred steadily, it thickens into a velvety stew that is deeply savoury without being heavy. Ours is finished with a little niter kibbeh or oil depending on how you would like it prepared.
